Puto Leche Flan also called steamed rice muffins with pudding-like toppings called Leche flan. A Filipino traditional dessert that is very familiar to every household in the country and also in some other parts of the world. If you haven't tried this recipe yet, here's a simple recipe guide for you to make your own Puto Leche Flan.
Recipe: Puto Leche
Preparation time: 10 minutes
Cooking time: 25-30 minutes
Total serving: 5-6 servings
Ingredients:
2 egg yolks
130 ml condensed milk
1tsp lemon or kalamansi juice extract
1 cup flour
1 tbsp baking powder
1/3 cup white sugar
3/4 cup water
1/4 cup evaporated milk
1 tbsp butter
1 tsp vanilla
1 egg
Procedure:
In a mixing bowl combine 1 cup flour with baking powder, 1 tbsp baking powder, 1/3 cup white sugar. Mix well. Then add all the liquid ingredients such as water, evaporated milk, and melted butter. Mix thoroughly until do not over mixed. In a separate bowl beat 1 egg until smooth with stiffed peaks. Add the egg mixture into the batter, mix, add vanilla extract, and beat until smooth. In another bowl beat two egg yolks and add 130 ml condensed milk. Add 1 tsp lemon or kalamansi juice extract and mix. Grease medium-size muffin molders with batter and pour the egg mixture in the moulders. Steam for 8 minutes. Remove the molders from the steamer, add the batter about 2/3 of the cup and cover. Don't forget to wrap the steamer cover with a cloth to avoid water dripping over the puto. Use a steamer that is good for slow cooking. Steamed for 8-10 more minutes over low heat. Do the toothpick method to check if the cake is cooked. Cool it first before removing the cake into the molders so that the Leche flan will not be soft enough. If it's soft, the leche flan toppings have the tendency to lose its shape or it will be deformed. Use a silicone molder if you like it to be in perfect shape.
