Leche Flan is very easy to prepare and cook. It has only 3 main ingredients milk, sugar and of course eggs. It's very sweet in taste and it melts in the mouth when you eat it. It resembles to the Japanese version "egg pudding" but with different ingredients.
Recipe: Leche Flan
Preparation time:10-25 minutes
Cooking time: 30-35 minutes
Total output: 1 lanyera of leche flan
Ingredients:
10eggs
1 can condensed milk
1cup white sugar
1 tsp vanilla extract
1 cup fresh milk or evaporated milk
Procedure:
Separate egg yolks from the egg whites using your hands or any improvised equipment you can use to separate them. Beat the egg yolks using whisker untill it become smooth. Add the liquid ingredients, add 1 can of condensed milk and 1 cup of fresh milk or evaporated milk. Mix it thoroughly untill the color is smooth and uniform. Also add 1 tsp vanilla essence to add a sweet aroma to our leche flan.
Procedure:
Prepare the caramel by adding 3 tbsp of sugar in the aluminum molder or what we call "lanyera" in Tagalog. Heat in a low flame untill the sugar caramelized. How to know? You will know it if it's golden brown in color but avoid burning it to avoid making the caramel bitter in taste. Pour the egg batter in the molders and cover it with aluminum foil. Use white clean cloth to wrap the cover(optional) of the steamer or much better to use a bamboo steamer. When it's boiling, move slightly the lid of the of the steamer cover to avoid too much pressure of the steam. Too much vapor sometimes is flooding the steamer which makes the leche flan watery.
Steam for 30- 35 minutes. After steaming wait for it to cool in a room temperature before carefully removing in the molder. Use a plate to cover the molder,and carefully turn upside down the molder with the plate. When you hear that the suction is already released it means you can remove now the molder and it's ready to serve.
