Recipe: No Bake Glazed and Choco Butternut Donuts

8 pcs choco glazed donuts
8 pcs choco butternut donuts
1 cup All purpose flour
1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup cocoa powder
2/3 cup sugar
1 tsp instant coffee
1/2 cup milk
1 medium size egg
1/2tsp vanilla essence
1/4 cup vegetable oil
1 cup hot water
Choco Glazed :
1 cup powdered sugar
1/4 cup cocoa
6 tbsp milk
Butternut powder coating :
1 cup all purpose flour
1/2 cup sugar
1 1/2 tbsp butter(melted)
1 tsp cocoa powder
1/2 tsp cinnamon powder
3 tbsp desicated coconut
1/2 tsp nutmeg powder
3 tbsp orange food color ( optional)
Procedure:
In a medium size bowl mix all dry ingredients. Mix 1 cup of all purpose flour with 1/4 tsp baking powder, 1/2 tsp baking soda,1/2 tsp salt, 1/2 cup cocoa, 2/3 cup sugar and 1 tsp coffee. Mix well. In a separate bowl, mix all liquid ingredients, 1/2 cup milk, 1 medium size egg, 1/2tsp vanilla essence, 1/4 cup vegetable oil and 1 cup hot water. Mix thoroughly the liquid ingredients before adding it to the dry ingredients. Mix well the cake batter until the texture and color is uniform. Grease cake molder with oil or butter and pour the batter into the molder. Cover with aluminum foil. Preheat water in a steamer and bring to boil for 60minutes or untill the cake is cooked. Check if the cake is ready by doing toothpick method.
While cooking the cake, prepare the chocolate butternut coating and chocolate glaze.
For choco butternut coating, mix in a bowl 1 cup all purpose flour, 1/2 cup sugar, 1 tsp cocoa powder, 1/2 tsp cinnamon, 3 tbsp desicated coconut, 1/2 tsp nutmeg powder and 1 1/2 tbsp melted butter. Mix it well to make it uniform in taste. Add 3 tbsp orange food color (optional) if preferred. Heat for 3-5 minutes in low to medium fire.
For chocolate glaze, mix together in a bowl 1 cup of powdered sugar with 1/4 cup cocoa and 7tbsp of evaporated milk. Heat for 1-2 minutes in low fire.
After steaming the cake, cool it first for few minutes. When cake is ready, scoop 1 full tbsp of cake and roll over to your palm with your fingers to form spherical-shaped donuts. This will make at least 16 pieces mini rolled donuts. Coat every piece of donut with chocolate glaze. And coat the other half with the butternut powder coating. The powdered coating is good for coating 16 pieces of donuts, if you like to coat all of it or prepare only half of the coating if you want to coat only half of it.
