Escabeche is an adopted meal from the Spanish culture because Philippines was influenced by the Spaniards for 333 years long before the Philippines became independent from the Spanish colony. Escabeche is a meal that is common in Spain and Portugal, it is a meal where fish is marinaded using vinegar and spices and is being fried. Escabeche in the Philippines is a type of meal that you can cook simply by combining fish with tomatoes and extra sauce with carrots or even bell peppers. It's budget friendly and also good for people who don't have much appetite to eat. Perfect light meal for lunch or even for dinner. Ingredients:
4 pieces galunggong fish
50 ml soysauce(for marinade process)
1/2tbsp salt(for marinade process)
Cornstarch as breading
2 pieces kalamansi to be extracted
1 medium size onion
2 pieces garlic
3 pieces tomatoes
240ml water
120ml sweet style banana ketchup
1/2 tbsp ground black pepper
Pinch of salt
Optional ingredients:
1 piece small carrot ( sliced in long strips)
1 piece red bell pepper ( sliced in long strips)
Preparation time: 5 mins
Cooking time: 15-20 minutes
Total serving: 4 servings
Procedure:
Marinade fish in 50 ml soysauce with 1/2tbsp salt and extracted juice from 2 pieces kalamansi. Marinade for 5-8 minutes. Use cornstarch as breading. After the fish is marinaded coat it with cornstarch. Fry the fish 5 minutes for both sides and in a low fire.
Use a pan and set burner into low heat, add 2 tbsp vegetable oil. Saute garlic first for 1 minute and followed by onions, untill golden brown. Add 1 piece of small carrot sliced into long strips ( optional). Add tomatoes a d saute for another minute. When the tomatoes are cooked add 120ml sweet banana ketchup and 120ml water. Cover and cook for 3 minutes. Add fried fish and add 120ml water. Add 1 piece bell pepper sliced into long strips (optional). Cover and let it simmer for 5 minutes and another 5 more minutes when turning the fish on the other side. And finally add 1/2 tbsp ground black pepper and enough amount of salt to taste.
